Rough Cat's Ear

You don't have to go far this time of year to find a patch of Rough Cat's Ear (Hypochaeris radicata). It seems to like open fields, vacant lots, and your backyard! This weed-like plant is similar to the Common Dandelion but grows taller and is a member of the Sunflower family. All parts of the plant are edible, but the younger leaves are best for salad use. Cat's Ear is native to Europe and has been introduced here and elsewhere; some consider it a noxious weed!

We found this 10 acre spread on Cornelius Pass Road and Baseline, where a certain big box store wants to build. I'm "rooting" for the cat's ears! This location would make a beautiful park, IMO. (6/09/2013).
